Bierhaus is seeking a skilled and passionate Commis Chef with a background in vegetarian cuisine, specializing in Mexican, Asian, and Mediterranean dishes. This role is ideal for someone who thrives in a fast-paced kitchen environment. The successful candidate will be instrumental in preparing and cooking a diverse range of high-quality vegetarian dishes, bringing their specialised culinary expertise to our exclusively vegetarian menu.

Key Responsibilities:

Food Preparation: Assist in the preparation and cooking of creative vegetarian dishes within Mexican, Asian, and Mediterranean cuisines, applying specialized knowledge and techniques.

Mise en Place: Prepare and organise vegetarian ingredients specific to these cuisines, including precise chopping of vegetables, preparation of vegetarian proteins, and creation of plant-based sauces.

Cooking and Plating: Execute vegetarian recipes with an emphasis on authenticity and presentation, ensuring all dishes meet the restaurant’s high standards.

Kitchen Operations: Effectively manage the fast-paced workflow of a small kitchen, ensuring timely dish preparation and service.

Kitchen Maintenance: Maintain a clean and organized kitchen, ensuring all equipment used in vegetarian food preparation is properly cleaned and stored.

Inventory Management: Oversee the stock of vegetarian ingredients, ensuring freshness, proper rotation, and notification of any shortages or expired items.

Health and Safety Compliance: Adhere to all health and safety regulations, particularly in food handling, allergen awareness, and maintaining hygiene standards according to HACCP Level 2 certification. This includes managing critical control points, maintaining high standards of cleanliness, and preventing cross-contamination in a vegetarian kitchen.

Requirements:

Experience: A minimum of 2 years of experience as a Commis Chef, with a strong background in vegetarian cuisine and a proven ability to work efficiently in a small, fast-paced kitchen environment.

Skills: Exceptional organizational skills, attention to detail, and the capability to maintain high standards under pressure.

Certification: Holds a valid HACCP Level 2 certification (including Food Hygiene, HACCP, and Allergen Awareness) to ensure compliance with food safety regulations and best practices.

Physical Requirements: Ability to stand for extended periods and perform physical tasks related to kitchen duties.

Employment Details:

This full-time position offers a permanent contract, commencing on December 1st, 2024, with a work week set at 39 hours. The annual salary is €34,000.
