Job Description

- Independent working chef for preparing Japanese dishes

Your main tasks will be:

- Cleaning and tidying: cleaning the work environment, kitchen equipment, and reporting any issues/defects; independently solving minor malfunctions; (arranging) disposal of waste.

- Preparation and cleaning: performing preparatory work such as washing, cutting, (pre)cooking, mixing, stirring, etc.; assessing the quality of products/ingredients to be used (freshness, shelf life, etc.), setting up tools; carrying out preparations, monitoring/controlling quality, doneness, taste, colour, fluidity, etc., and making adjustments/additions; (having) orders made ready for service by performing à la minute cooking tasks, portioning, and garnishing; supervising the work of assistant(s), giving directions and instructions; ensuring compliance with regulations in the areas of safety, labor conditions, HACCP, and work and presentation methods (house style).

- Inventory management and daily ordering: planning daily activities and ordering food supplies and other stock replenishments from mainly regular suppliers under fixed conditions; receiving, checking, and storing ordered food supplies and other items; monitoring shelf life and hygiene.

- Quality improvement and optimization: checking and accounting for quantities of raw materials and (semi-)finished products used; providing input for the menu, recipes, work instructions, etc.; developing/adapting recipes, making calculations, etc., and discussing deviating menus for parties; elaborating proposals into recipe instructions, etc.

Work is performed 5 days per week, 7.6 hours per day, with hours from 16:00 until the restaurant's closing time. You are also available to work on holidays.
