We are currently looking to recruit a number of Head Chefs to join our expanding kitchen teams across our hotel group.
Main Duties and Responsibilities
Purchase and labour costs to be kept in line with annual budget.
Manage the team through the development and retention of dedicated and committed personnel, making the kitchen team highly motivated and as effective as possible, keeping staff turnover and associated training and replacement expenses within budget.
Keeping equipment costs as low as possible, managing the overall maintenance and service program for the kitchen and keeping all equipment properly cleaned and maintained.
Carrying out regular stock takes.
Creating and testing dishes that meet the approval of Senior Management.
Controlling that the menu is served each day with extreme consistency and reliability, that the appearance, portions, temperature, seasonings, ingredients, and presentation are always the same.
Ensure that the speed and coordination of food preparation in the kitchen delivers the food for the customers quickly, completely, and in the appropriate order.
Manage all HACCP and other legal standards as well as keeping all records, certifications and licenses up to date.
Department Standard Operating Procedures must be developed and kept updated reflective of the changes in our service and current to our strategies and sales focus.
Ensure that all customer feedback (negative, positive, constructive) is communicated to the relevant person immediately to allow appropriate action to be taken.
Purchasing & Cost Control
Implement agreed purchasing procedures and ensure effective and efficient stock control systems are in place. Work closely with Food & Beverage Management, Deputy General Manager and General Manager on menu planning through introducing new menu ideas and monitoring food and beverage sales to achieve predetermined margins.
Health & Safety
Adhere to all regulations in respect of health and safety, hygiene, customer safety, fire regulations, emergency procedures, licensing laws, weights and measures, byelaws etc.
Report any defects, damage, theft, breakages or hazards to ensure that equipment is functioning and well maintained.
Ensure that any incidents or accidents are reported to the relevant Manager and recorded.
