Job Description – Biryani Chef
Location: Deccan Platter, Hollerich, Luxembourg
Employment Type: Full-time (40 hrs/week)
Reports to: Head Chef / Restaurant Manager
Position Overview
We are seeking a skilled and passionate Biryani Chef specializing in authentic Hyderabadi-style biryanis and related accompaniments. The ideal candidate will bring expertise in traditional cooking methods, attention to detail, and a dedication to maintaining consistent taste and quality.
Key Responsibilities
• Prepare and cook a variety of authentic biryanis (chicken, lamb, mutton, vegetarian, paneer, seafood).
• Ensure accompaniments (e.g., Mirchi ka Salan, Raita) are prepared to authentic standards.
• Follow traditional cooking methods, including dum-style cooking, while maintaining consistency in flavor.
• Maintain cleanliness and hygiene standards in compliance with HACCP and Luxembourg food safety regulations.
• Assist in menu planning, costing, and portion control related to biryani dishes.
• Manage stock levels for biryani ingredients (rice, spices, meats, vegetables).
• Train and guide kitchen staff on biryani preparation methods when required.
• Collaborate with the kitchen team to ensure smooth service during peak hours.
Qualifications & Skills
• Proven experience as a Biryani Chef, Tandoor Chef, or Indian Cuisine Specialist (minimum 3–5 years).
• In-depth knowledge of Indian spices, rice varieties, marination techniques, and slow-cooking methods.
• Ability to produce consistent flavors and maintain authenticity.
• Strong organizational and time-management skills.
• Knowledge of food hygiene, safety standards, and HACCP compliance.
• Team player with good communication skills.
Education: Culinary degree/diploma preferred, but equivalent professional experience in Indian kitchens will be considered.
